Our review
The Harvest Right Medium is a home freeze dryer that Harvest Right says handles 10 to 15 pounds of fresh food per batch on a standard 110 volt outlet. It comes with its vacuum pump and a starter set of storage supplies. It is a food-preservation appliance that needs many hours of mains power per batch, so it builds a store ahead of an outage rather than helping during one.
What the Medium is and who it suits
Harvest Right sells its home freeze dryers in Small, Medium, Large and X-Large sizes. The Medium has five stainless steel trays and 675 square inches of tray space, and Harvest Right calls it perfect for a counter top, cart or table. It suits a household that wants to turn homegrown or bulk-bought food, and even whole meals, into shelf-stable food.
Harvest Right says the results keep their flavor, nutrition and texture. Its page puts shelf life at up to 25 years in one place and 25+ years when stored properly in another. Those are the maker's claims, and both depend on proper storage.
Batch size and what comes in the box
Harvest Right lists 10 to 15 pounds of fresh food per batch for the Medium, against 6 to 10 pounds for the Small, 18 to 27 pounds for the Large and 40 to 50 pounds for the X-Large. It also quotes up to 3,000 pounds of fresh food a year, with its own caveat that this would take four batches a week for 50 weeks.
The package lists the freeze dryer, an industrial vacuum pump, pump oil and an oil filter, five trays, a guide to freeze drying, 50 mylar bags, 50 oxygen absorbers and an impulse sealer. Harvest Right also offers an oil-free pump as an upgrade, which it says needs no oil changes.
Power, batch length and noise
The Medium is listed for a standard 110 volt outlet, and Harvest Right's setup guide says small, medium and large models want a dedicated 15 amp circuit. The page also lists a 220 volt Medium, so check which version you are buying. For the Small and Medium, Harvest Right says peak draw is about 13 to 15 amps, averaging 9 to 11 amps, which it puts at roughly 990 to 1,210 watts.
Harvest Right says most batches run 13 to 35 hours, and a warm room makes them longer. It says the machines perform best in rooms of 45 to 75°F and can operate between 35 and 90°F. It describes the noise as a hum similar to a dishwasher.
Space, delivery and upkeep
The Medium measures 19 by 25 by 29 inches and weighs 119 pounds. It ships in one package of 209 pounds, delivered curbside to physical addresses only. Harvest Right says the side vents must stay unobstructed for airflow. Upkeep is light: replace the pump oil every 20 to 30 batches, which it says takes about two minutes, and clean the unit as needed. The warranty is three years limited.
How it fits with other ways to build a food store
Our freeze dryer comparison sets the sizes side by side. A freeze dryer is a project: it takes an outlay, counter space and a routine of loading, drying and packing. If you only want a ready food store, the kits on our emergency food supply page need no equipment, and our emergency food storage guide covers how much to keep and how to rotate it.
Who should skip it
Skip the Medium if you want food on the shelf without effort, if space is tight, or if you expect to run it only a few times a year. Skip it as an outage tool, too: a batch needs hours of mains power. If you ever plan to run it from a generator, compare the dryer's stated peak draw with a generator's running watts, not its starting watts, and read the safety rules in our generator safety guide. See the generators page for options.

Questions
How much food does the Medium freeze dry per batch?
Harvest Right lists 10 to 15 pounds of fresh food per batch on five trays. Its Small takes 6 to 10 pounds and its Large 18 to 27 pounds, so the Medium sits in the middle of the range.
What outlet does the Medium need?
Harvest Right lists a standard 110 volt outlet and says small, medium and large models want a dedicated 15 amp circuit. It also lists a 220 volt Medium, so confirm the version before you order.
How long does a batch take?
Harvest Right says most batches run between 13 and 35 hours, though candy can finish in a few hours. Dense or sugary foods and warm rooms make a batch longer.
Can I run it from a generator during an outage?
The Harvest Right pages cited here don't cover generators. Harvest Right states a peak draw of 13 to 15 amps for the Small and Medium, so compare that with a generator's running watts, not its starting watts. Ask Harvest Right before connecting it, and keep any generator outdoors.
